Chicken is one of my all time favourite dishes ever! I have been asked by several of my friends which I prefer over the other; Kienyeji chicken or broiler chicken. Kienyeji chicken triumphs any day because of its awesome depth of flavour. All the exercise they get from roaming almost the whole day, the food they eat (grass, insects, grains) all contribute to the complexity of their flavour. One of my best ways of preparing the chicken is wet fry. Now you might be asking yourself what does wet fry mean? This is when you cook your food as a stew but you leave the stew to reduce to a very thick syrup consistency. This enables the flavours to become really concentrated and intense.
