How to Peel Matoke (plantain)

Plantains have a very thick peel which can be quite a pain to remove. It does not come off as easily as a banana peel. So, some technique is needed to make it faster and easier to do so.

Oh and I should mention that matoke is normally cooked while bananas can either be cooked or eaten raw.

Ingredients

  • Four bananas
  • 500 ml water
  • a knife
  • Juice of one lemon
  • 20 ml of vegetable oil

Directions

  1. Start by oiling your hands in order to form a protective barrier between the matoke juice and your hands.
  2. Next, cut off the two ends of the matoke.
  3. Make three to four incisions that run lengthwise from the top to bottom on the matoke being careful to score lightly on the peel. The number of incisions will depend on the size of your matoke. Be careful not to cut yourself.
  4. Run your finger along the peel gently from top to bottom as you loosen the peel and it will come off. Any remaing peel that is still stuck on your matoke can either be scrapped off or peeled by using a knife.
  5. Immerse the peeled matoke in cold water mixed with an acidic medium like lemon juice, lime juice or even vinegar. This will delay the rate at which the matoke changes colour to black.
